How it all began. . . Part 1

I was enjoying a few moments of “dream about the future” time while Mr. Plate with a Purpose got Little Baby Plate with a Purpose ready for bedtime.  Full-time parents probably know what I am talking about.  After a wonderful, but long day you finally get to sit down and check email, maybe do a google search that’s been on your mind or just goof off for ten minutes.  Mr. Plate is great about giving me a few minutes to do these things every evening while he reads a story and puts PJs on Little Plate.
Having always wanted to get yoga certified I searched for international yoga training schools.  Thailand?  Yes Please!  Mr. Plate and I have been anticipating and even planning an international tour within the next five years and yoga school is definitely to be one of the stops.  Something unexpected came from the search though.
A professional chef’s program that a plant-based culinary arts school offers popped in the list of websites to check out.  Now why a  culinary arts school during a yoga school search?  The school focuses on health-supportive foods and has a sister company that is a yoga studio and school that happened to be offering a full-ride scholarship for one lucky student starting the Summer 2016 track.  Looks interesting… pinned.  Time for mommy’s half of bedtime.
A few days later I told Mr. Plate about the school’s program and the scholarship.  I just mentioned that it looked kind of neat and maybe I could keep it in mind for a few years down the road.  He said I should apply now and see what happens.  It’s a $23,000 full-scholarship and the odds probably wouldn’t be in my favor, but I should at least put an application together.  Updating my resume sounded like a good idea anyway so with his push of encouragement I decided to go for it.
The first step was to join an online open house and listen to a nice presentation that the admissions team put together.  I really liked what I heard.  I applied to the school and was accepted for the 2016 Summer track.  Check and check!  Next step- write a scholarship essay, outline wholesome food experiences as well as well as yoga experiences.  Demonstrate a love for these things.  I definitely have some passion in these areas and asked 3 amazing people that have helped me grow in these areas write letters of recommendation for my scholarship application.  They were such a help.  Then the worst part. . . waiting.
This thing started as a whim and was starting to become something Mr. Plate and I were really excited about and hopeful for.  It seemed crazy, but the more we thought about it the more we decided that we had to do it if I received the scholarship.  We knew it would be insane.  A life and game changer!  A 23 hour move from our current residence.  We would have to sell our charming little historic house, find homes for our animals, de-junk, store the things we would want to keep for our next homestead venture, etc.
After a few weeks the day of the scholarship arrived and. . .
