Hollanbec Farm-Eggs and Milk Galore

While working on these farms we get to eat like the farmers eat.  That means fresh organic products to enjoy and cook with.  We also have the opportunity to learn how to process and make many different things.  Heather was awesome at making sure we had the opportunity to watch and help with some of her food processing.  This included making cottage cheese, cream cheese, whipped cream, cheddar cheese, yogurt, butter, soap and cleaning up the fresh eggs that the 100-some chickens kindly laid for us each day (I made A LOT of quiche).

We are very appreciative of whole food, farm fresh, organic, grassfed, humanely raised ingredients.  That’s why we are here!

It became a bit of a personal challenge to see how many eggs I could use in any given recipe.  Of course, this is why so many quiches where made.  We also enjoyed a flourless chocolate torte cake (always a fave), an old fashioned pound cake (a recipe from the 1700s), lemon bars, overnight breakfast casseroles, and more.  Oh, don’t forget the strawberry rhubarb bars that was a real hit.   Heather introduced us to her homemade greek yogurt with toasted coconut and a drizzle of their own maple syrup. . . ahhhh. . . maple syrup to die for. . . it was AMAZING.  They call store-bought maple syrup “telelphone pole syrup” and I can see why.  I seriously have never tasted syrup this good.
